Tiramisu with grapes

Tiramisu with grapes

For 4 persons

Ingredients :

  • 300g  large sized grapes
  • 500g  mascarpone
  • 30cl very cold, long-life liquid cream
  • 100g  sugar
  • 4 egg yolks
  • 100g pink biscuits roses of Reims
  • 10cl sugar cane syrup
  • 10cl  muscatel from Beaumes-de-Venise

Poach the grapes in boiling water for 3minutes, drain and rinse them under cold water, then dry them off.

Crack open the eggs and separate the egg yolks from the egg whites. Keep the egg whites cool and beat the egg yolks with the sugar until the mixture becomes pale and thick. Add the mascarpone, little by little, while beating.

Whip the very cold, long-life cream until thick and carefully fold it into the mixture. Remove the grapes from the stem and cut each grape into halves. Mix the muscatel with the sugar cane syrup, dip the biscuits quickly into it, then arrange them  at the bottom of 6 glasses.

Spread a layer of mascarpone cream over them, place a layer of sliced grapes against the glass, alternate the layers until there are no more ingredients. Refrigerate for about 4 hours. Serve very cold.

Finally sprinkle some biscuit crumbs over the tiramisu for garnish and decorate it with sugar-coated grapes. You can prepare this dessert the day before.
